I know vegans are expected to want super healthy food, but I am fine with sweet and bad for me if I am going to go through all the effort of making them from scratch. I would just really like to have some peanut butter cups without spending several dollars to get one from a vegan website.

It’s pretty easy, start with powdering raw sugar in a blender or food processor. You also need some *real* peanut butter (the kind that just lists peanuts and salt as ingredients). Do NOT stir the oil into the butter, pour it off (important for texture). Whip enough of your raw sugar powder into some of your defatted peanut butter to get a fairly stiff dough.

Now you want to coat either a pie tin (I like mine BIG) or muffin cups with melted vegan friendly chocolate and chill to set the chocolate. Gently press the peanut dough into the chocolate cups then pour more melted chocolate over the top to seal the cup. Freeze for about 10 minutes and the cups should easily release from the mold. If you’re nervous about unmolding you can (of course) use cupcake liners with muffin tins or parchment paper with a pie tin<g>.

well if you can find vegan (authentic not processed) chocolate and peanut butter….

which is almost impossible unless you have alot of options and you have money to spend.

(and no…the last 4 ‘vegan’ peanut butter cup options i found at a store had the chemicals that are from animal biproduct… and that’s still from an animal even though it’s been watered down and processed over and over.. plus it also had dairy in it.. i have no idea why the word "vegan" was on the package.)
